Delicious Gluten Free Brownies

Hey everyone,
For those of you that don’t know me, my name is Emily Nichols and I am on a quest for delicious recipes that are also gluten free. A few years ago my father was diagnosed with Celiac Disease and since then, all gluten had to be omitted from his diet. Mind you, this is a man in his 50’s that has only ever known the joys of eating foods filled with wheat products so making this change after all this time wasn’t easy.
If you’ve ever eaten a strictly gluten free diet you would know that the foods you once loved filled with wheat no longer taste the same because they are now replaced with substitutes that sometimes don’t measure up. So I have taken it upon myself to figure out the best recipes so that nobody has to feel like they are missing out ever again.
This gluten free brownie recipe is now near and dear to my heart because it’s so fudgy and delicious; if I didn’t tell you they were gluten free you would never know! So please try out this recipe and I hope you enjoy it as much as I do.
Ingredients:
1 cup of gluten free flour (I prefer Jules all purpose flour)
¾ cup of cocoa powder
¼ tsp of salt
14 tablespoons of unsalted butter, melted
1 ½ cup of granulated sugar
1 tablespoon of vanilla extract
3 large eggs at room temperature
1 cup of mini semi sweet chocolate chips
Directions:
1. Preheat the oven to 350 F and grease an 8 x 8 pan
2. In a mixing bowl combine the flour, cocoa, and salt (set aside)
3. In a separate mixing bowl combine the melted butter, sugar, and vanilla
4. Once the wet ingredients are combined, add the eggs one at a time and mix between each addition. For this recipe we are using eggs from free range chickens located at the Nichols Farm in Lafayette, NY
5. Add the dry ingredients that you had set aside to the wet ingredients, make sure to scrape the sides of the bowl and do not over mix
6. Add ½ cup of the chocolate chips to the batter and fold them in
7. Pour the brownie batter into your greased pan and add the additional ½ cup of chocolate chips to the top
8. Place in the oven and bake for about 25 minutes or until a toothpick comes out clean
9. Let cool and enjoy your gluten free brownies!
