How to Make Homemade Shredded Venison Chili

Community, nature, cold mornings, and hot meals. This is what hunting season is all about. There’s something special about driving around town and seeing the spoils of everyone’s patience and hard work hanging in their yards, ready to be turned into sausage, steaks, stews, roasts, and venison chili. Mmmm!

It’s been a busy winter for us so far and unfortunately, it means we haven’t been able to get into the woods and stock our own freezer for the coming months. But luckily for us, our thoughtful neighbor got himself a six-pointer and was happy to share a beautiful roast. This was very generous and we can’t wait to return the favor! In the meantime, we decided to take the roast and make ourselves some hearty homemade venison chili. Check out the savory recipe below!

Venison Chili Ingredients

2 lb. Venison Roast

4 packs of McCormick Chili Seasoning (or seasoning of your choice)

2- 28 oz cans of diced or crushed tomatoes

3- 20 oz. cans of kidney beans

1- 20 oz. box of beef broth

4 packs of chili seasoning, 2 cans of diced/crushed tomatoes, 3 cans of kidney beans

Optional:

One bell pepper and one large yellow onion, diced

Step 1-Cook the Venison Roast

You can cook your roast in the oven, but we prefer using the crock pot because we think the roast turns out more tender and flavorful with this method.

Place the venison roast in the crock pot whole, and add the beef broth and 1 packet of the chili seasoning.

Cook the roast on LOW for 8 HOURS.

Place venison roast, beef broth, and one chili seasoning packet in crock pot on low for 8 hours.

Step 2- Drain & Shred the Roast

After 8 hours on low, the roast should be fully cooked and ready for the next step. At this point, you’ll want to carefully drain off all of the broth. Throughout the cooking process, the broth will have drawn out most of the “gamey” taste that some people complain about with venison. Toss the broth and say goodbye to the “gamey” taste!

Now, it’s time to shred the roast with either forks or “bear claws” that are specifically designed to shred meat. Dad has a pair of bear claws that he uses all the time to make pulled pork and he loves them!

Step 3- Combine the Venison Chili Ingredients

The rest of the process is simple. Load the empty crock pot with your crushed or diced tomatoes, kidney beans, the rest of your chili seasoning packets, and any onions and peppers if you choose. Mix it all together well.

Now, add in the shredded venison, stir, and cook it on LOW for and additional 2 HOURS.

Combine the rest of the ingredients into the empty crock pot and add the shredded venison. Cook on Low for additional 2 hours

Step 4- Enjoy Your Venison Chili

And that’s all there is to this recipe. This venison chili is simple and absolutely delicious so savor every bite! As a serving suggestion, we recommend getting a loaf of hearty, homemade multigrain bread to dip in your chili. You can also add some shredded cheddar cheese and sour cream if you prefer. It’ll taste great either way!
