Simple & Savory Autumn Harvest Squash Soup
It’s that time of year again when the leaves begin to change and there’s a noticeable crispness in the air signaling autumn is on its way. And what better way to celebrate the transitioning of the seasons than by using up some of the final harvests of summer squash to make a wonderfully warm and savory squash soup?!

Passed down from my great Grandma Drago, this squash soup recipe has been a staple in our family’s kitchen for generations. Affectionately dubbed ‘Grandma’s Autumn Harvest Soup’, this recipe is simple, delicious, and it’s a great way to usher in the autumn season.

Squash Soup Ingredients
3 fresh yellow squash, cubed (Zucchini also works!)
1 medium/large onion, chopped
1 or 2 garlic bulbs diced
Water, or for a richer taste, chicken broth- enough to cover squash in pan
Couple sprigs of fresh basil
Extra Virgin Olive Oil
1 tbsp tomato paste- optional
Cooking Instructions
Cube the squash, dice the onion, and chop the garlic. Add all ingredients to a medium saucepan.
Depending on your taste you can add a tablespoon of tomato paste. Also, depending on how much you like garlic, you can add more or less. We typically use two cloves.
Cook at rolling boil until squash is tender, usually about 15-20 minutes.
Add a splash of Extra Virgin Olive Oil.
Squash Soup Serving Suggestion
This recipe makes ~6 servings.
We prefer to eat our squash soup fresh with a warm baguette. It also tastes great when garnished with croutons, oyster crackers or saltines.
It’s also a great alternative to the classic grilled cheese and tomato soup. Try this soup recipe instead!
